They are fighting to the death in an empty field. Neither knows anything about the other prior to the fight. The fight will last as long as it has to.

Maximus. Balian is a thinker and a philosopher, not a fighter. His movie is supposed to be a slow, poetical and artsy reflection of the madness of war and the extreme corruption that comes with extreme power, so he isn't involved in that many fights. Maximus, on the other hand, is right at home in a setup like this. The mere concept of fighting to the death with no motivation other than "because skadoosh says so" is alien to Balian, while Maximus calls this Saturday.

You're breaking the fourth wall of the scenario, so that's irrelevant. But you're half-right about Balian, he's not as old as Maximus and hasn't been fighting for as long. But he did fight, quite a lot, against various opponents, and lead the army at the end, so saying he's not much of a fighter is straight up incorrect.
