I began to create a match where something came up, and I had to save it. Now once I returned to the site and began to write the set up(In word) I had a better idea for the match, but I needed to add someone it. On the screen where you can retrieve your saved match it says you can remove character with the remove button, but I don't see a remove button underneath their pictures.

Should I just add the extra character in the set up, or is there something I'm missing?

I don't see it either. My guess would be since it's saved, you may not be able to change participants once you've chosen to save it. So you could write in the character, or wait three hours from when you saved the match to create it anew. Of course, you'd lose 2 points using the second option. And since it hasn't happened to me I don't know whether or not that means the characters will be unusable for 3 days once that has happened. So writing the person in may be the best option.
